~ Di's Fresh Tomato Salsa ~
Ingredients:
2 cups freshly chopped tomatoes
1 cup freshly chopped raw tomatillo
1 cup finely diced onion
½ cup chopped green bell pepper (You can also use yellow bell peppers for more color)
¼ cup minced fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons chopped fresh jalapeño pepper (including seeds)
½ teaspoon ground cumin
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper
Directions:
2 cups freshly chopped tomatoes
1 cup freshly chopped raw tomatillo
1 cup finely diced onion
½ cup chopped green bell pepper (You can also use yellow bell peppers for more color)
¼ cup minced fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons chopped fresh jalapeño pepper (including seeds)
½ teaspoon ground cumin
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper
Directions:
- Chop the cherry tomatoes in half and sprinkle the salt over them and let them sit for around 5 minutes to remove some of the water.
- Chop the raw tomatillo, onion, the bell peppers, cilantro, and jalapeño pepper.
- To the chopped tomatoes, stir in the rest of the ingredients cumin, and pepper, and the lime juice together in a bowl until just combined.
- Serve and enjoy!
For a less watery salsa substitute True Lime or another crystallizing lime powder for the lime juice..
